âWelcome back to another week of food spotlighted that we think you should know about at Universal. This week we're focusing on Vegan and Vegetarian options available during Universal Holidays. So let's get started with our number one.
Our first pick is the VBLT, which is made with smoked tempeh bacon. Tempeh is a cooked and fermented soybean that has been firmly packed into a dense cake. Tempeh is a good protein substitute because it takes on the flavor of sauces that you cook it with.
The smoked tempeh bacon sits on a cranberry loaf with Divina tomatoes, arugula, vegan pepper jack cheese, and tomato aioli. The VBLT can be found across from Mel's Drive-In.
Next, we present the Vegan Sausage and Peppers from the food truck in front of the Music Plaza Stage. The Sausage and Peppers come with grilled vegan Italian sausage topped with marinara, green peppers, onions, and vegan shredded cheese. â
Last but not least in our lineup is a vegetarian option. The Cookies and Milk is a cookie cup dipped in chocolate then served with a carton of plain dairy milk. These are presented with a straw-filled with flavor beads. Three different flavors of straws with flavor beads are being served, Cookies and Cream, Chocolate, and Strawberry. â
